I agree Heiney, in many countries waiters are on the lowest salary but make wonderful tips because they understand the meaning of service and exceed customer expectations. You only get out of life what you put into it, so my original post about managers still stands as they are responsible for training and standards. The buck stops there.

Goldman, give me waiters with great social skills and who are self motivated, I will teach the technical skills myself to correct standards. Unfortunately in China tipping is not part of the culture, I've even had waiters running after me and giving a tip back so money motivation is a little non-existant. But, vicious circle - no service, no tips, no tips , no service

It all comes down to training, be it customer service, smiling, order delivery sequence, upselling, handling of complaints & irate patrons...
training - training - training...
selecting candidates on motivation: have them pay for their training AND qualify to enter.
guaranteed jobs upon completion...
2 months (6 rotations a year) or 6 weeks (8 rotations) - team training better than individual - contracts possible with restaurant & hotel chains.

If you tip for terrible service that's your fault. Having been involved in both hospitality & tourism industry and in training for a long time be careful with your terminology. I was not talking about US, I was talking about China, attitudes would change if tipping for service was the norm. It's also not theoretical, it's part of practical motivation for servie staff

Don't know much about hotels in other countries,but the service in most Chinese hotels is not equal to their gourmet food or fabulous buildings.Hotel managers should be responsible for this,but not all their fault.Staff training isn't the real training.When I did my internship in hotels,I only learned some skills from the training but not the service.Before losing all my enthusiasm,I left.But what I learned is I should respect all waiters,cause I was one of them.I understand them.
